Oh would you look at that, I’ve got a new series up on the blog. WTE – Worth The Effort. Basically what this series will entail is I will be trying a bunch of Banting (lchf) recipes and tell you if they are worth the effort. Lately I have fallen off of the Banting band wagon and run down a hill into a fiery pit of sugar and carbs. I’m basically telling you all of this so you can understand that my weight loss journey is so far from perfect and easy. So to stop me from falling prey to the evil that is sugar and carbs (for my body any way) I will be attempting a bunch of Banting recipes and reporting back.
I am through and through, a sweet breakfast kind of girl. My favourite food prior to my low carb, high fat life, was cereal. I kid you not, I could eat cereal all day every day. But when it comes to cutting out the nasties and excessive carbohydrate intake, it doesn’t leave you a lot of options in the breakfast department. None that mimic carbs any way! So I have been on a hunt for the last two years (I’m not even joking) for the best recipe for pancakes/flapjacks/crumpets what ever you call them, I’ve tried them. And I have finally found a really really good one!
The recipe I found came from Lisa on Low Carb Yum which is absolutely amazing. So I decided yesterday to give it a go and see what would happen. I didn’t have high hopes because I’ve tried a bunch of recipes and have never found one I loved. Until now. Pair your pancakes with some honey and butter, or try my strawberry jam!
The best thing about this recipe is that you can also freeze these and pop them out when you need! Obviously this is not an everyday breakfast option, but its a nice treat for weekends.
